Who knows, but one of the others is a John Dory:

I saw one of those on the Persia yesterday. Fantastic fish - very
pre-historic looking. I think they are usually deep water fish, but you
do get the occasional one in the "shallows". I'm told there are a pair
round the Egan Layne this year too.

As far as I know this Zeus Faber (family Zeidae) lives from the shallow
up to 400m. It usually hunts shoal fish (like sardines) and is
delicious. Not caught by itself, but as a bycatch.

Saw one on the Layne and one on the Persia over the weekend - the one
on the Persia was the biggest one me or my buddy had ever seen: about
15-18 inches tall

It looks like a Wrasse - similar to the Dapple Wrasse (Coris variegata),
though that doesn't seem to be found in the Med
