OK, I'm doing a barbecue this evening, turkey and ribs. I have hickory,
apple and charcoal. What combination do you guys use? Do you even use
charcoal? and yes, I have a proper Texas style side box smoker.

I combine a key with the ignition on my truck and drive someplace that makes
BBQ I like.  There are several people in this group that are way better at
this than I ever was, ever will be, or want to be.

Start the fire with the hickory, get it reduced to coals and then add
the apple.  When it starts to smoke, it's time to cook.  Be careful
opening the firebox, you'll quench the fire in nothing flat.

Thanks Dillon, I'll try that next time. I did it with just apple, and it
all came out really good.
