If you had a choice between the three, what would you recommend?

Cayman comprises three islands, two of which are quite different from the
third.  Turks and Caicos comprises even more islands.  Belize is a country
with multiple popular diving areas, plus plenty of stuff to do on land as
well besides the normal beach and water activities.

Maybe you could narrow your question a bit?

I've been on all three, twice at T&C. Belize was my first live-aboard
experience, that was some time ago now.

IMO its almost a toss-up, they're all very good. Check on damage to Cayman
reefs from last year's hurricanes, that might help you eliminate Cayman (I
have not been following that). Belize gets a demerit for a half a day wasted
at the Boring Hole; if you've already seen that, I'd say go with T&C.
