I'm looking for some dive boat options from Mexico (Cancun area) to
Cuba. Any recommendations?  I'd like to just go one way and then fly
back.

There are lots of one-way boats from cuba.   Of course you
usually have to paddle alot.  Make sure to take proof of
US residence, so that the US Coast Guard won't return
you to Cuba with the other paddlers.
