I recall hearing a while back that SDI requires all OW students use
computers, and the teaching of tables is optional (up to the
instructor)... Is this correct?

When I got my first certification in 2000, it was through SDI and we were
indeed required to use computers. We were taught how to use the tables as
well but this only was a very brief use of them. We never used them for dive
planning at all. I, being anal about reading everything I can, have used the
tables more extensively and was confident enough with them to do planning
when I took my AOW and Nitrox courses too.
