Seeking S Fla or Keys quiet resort

I'd like a break from airlines for next vacation and would like a
laid-back kind of place I could drive to.  December time frame.

Ideal:
Nice, but not lavish accommodations.

Relatively quiet.  Enjoy reading in shade on beach.

Good food.  Not gourmet, but tasty and lots of it.  Buffet is a plus.

On water with snorkeling (by "snorkeling" I mean play in water with
mask and fins - not necessarily a Caribbean style reef).

Good bar with lots of cold beer, wine and mixed drinks.

Any suggestions would be appreciated.

Very interesting - thanks.
If you have been there, do they offer snorkeling thereabouts (off
shore, just want to play in the water, not take a boat trip)?

And how is the food service?  We would like something casual.
